MELK TERT (makes two)
PASTRY2 cups flour1 egg125g (1/2 cup) butter1/2 cup sugar2 teaspoons baking powder. Rub butter into flour and baking powder.. Beat egg and sugar, add to flour.. Press into tins. Bake blind 15-20 minutes at 190oC (375oF)FILLING3 1/2 cups of milk2 tblsps flour3 teaspoons vanilla essence1 tblsp (20g) butter2 tblsps cornflower3/4 cup sugar2 eggs. Boil milk and butter together.. Beat eggs and sugar very well.NOTE: MIX CORNFLOWER WITH A LITTLE COLD MILK TO AVOID LUMPING.. Add flour and cornflower, stir into boiling milk. Boil for a few minutes, stirring.. Remove from heat and add vanilla essence.. Pour into pastry shells.. Sprinkle with cinnamon.. Leave to set.
